Tagliare il petto di pollo in pezzi regolari. Portare a ebollizione una pentola d'acqua salata, immergere il pollo e cuocere per 15 minuti fino a cottura completa. Scolare e lasciare intiepidire.

In una seconda pentola, cuocere le patate dolci tagliate a cubetti per 12-15 minuti insieme ai fagiolini, fino a renderle tenere ma ancora sode. Aggiungere i piselli negli ultimi 3 minuti. Scolare e raffreddare in acqua fredda.

Tagliare a julienne le carote crude e spezzettare la lattuga romana a mano.

In una ciotola, preparare il condimento mescolando lo yogurt greco con il succo di limone, l'olio d'oliva, sale, pepe e le erbe aromatiche tritate finemente.

Trasferire in una grande insalatiera il pollo raffreddato e tagliato a bocconi, le patate dolci, i fagiolini, i piselli, le carote e la lattuga.

Versare il condimento e mescolare delicatamente con una spatola fino a amalgamare tutti gli ingredienti.

Riporre in frigorifero per almeno 10 minuti prima di servire fredda.
