In una pentola, portare il brodo vegetale a ebollizione. Aggiungere la quinoa e mescolare. Ridurre il fuoco, coprire e lasciare cuocere a fuoco lento per 15 minuti. Togliere dal fuoco e far raffreddare.

In una ciotola grande, unire la quinoa raffreddata, i fagioli neri, i pomodorini tagliati a metà, la feta sbriciolata e i cipollotti affettati.
