Precalda il forno a 200°C. Taglia le melanzane in fettine longitudinali di 5 mm, spennella con mezzo cucchiaio d'olio e disponi su una teglia. Cuoci in forno per 20 minuti finché sono morbide e leggermente dorate.

Estrai le melanzane dal forno e lascia intiepidire per 5 minuti.

In una ciotola, unisci le melanzane tiepide, il succo di mezzo limone, la paprika, il sale, il pepe e mescola delicatamente con un cucchiaio di legno.

Stendi i filetti di salmone su un piano di lavoro. Distribuisci equamente la crema di melanzane su ogni fettina, senza eccedere.

Arrolla ogni fettina di salmone a partire da un lato, chiudendo bene. Fissa eventuali involtini con uno stuzzicadenti.

Disponi gli involtini in una teglia rivestita di carta forno, cospargi con il rimanente olio, il timo e l'origano.
