Method

Lavare e affettare a julienne la verza, le carote, le zucchine e il cipollotto in strisce sottili.

Scaldare un cucchiaio di olio in una padella ampia a fuoco medio-alto; aggiungere le verdure tagliate (verza, carote, cipollotto) e rosolarle per 4 minuti.

Aggiungere le zucchine e i germogli di soia, versare la salsa di soia e cuocere per altri 3 minuti, mescolando. Trasferire il ripieno in una ciotola e lasciarlo raffreddare.

Nel frattempo, tagliare il tofu affumicato in dadini e aggiungerlo al ripieno ormai tiepido, mescolando delicatamente.

Immergere una foglia di riso in acqua tiepida per 30 secondi fino a renderla morbida, quindi adagiarla su un piano pulito.

Distribuire 3 cucchiai del ripieno (tofu e verdure) nella metà inferiore della foglia, lasciando 2 cm dai bordi laterali.

Ripiegare i bordi laterali verso il centro, quindi arrotolare la foglia dal basso verso l'alto fino a formare un involto compatto e sigillato.

Disporre gli involtini sulla teglia rivestita di carta forno con la cucitura verso il basso.

Vaporizzare leggermente gli involtini con spray di olio da entrambi i lati.

Infornare a 190°C per 18-20 minuti fino a renderli leggermente dorati e croccanti.

Estrarre dal forno e servire tiepidi con un contorno di salsa di soia diluita o una salsa di peperoncino leggera.
