Method

In una ciotola capiente, sciogli il lievito di birra nell'acqua tiepida e aggiungi lo zucchero. Lascia riposare per 5 minuti fino a quando non diventa schiumoso.

Aggiungi la farina integrale, lo yogurt greco e il sale. Mescola fino a ottenere un impasto appiccicoso ma omogeneo.

Trasferisci l'impasto su una superficie infarinata e impasta per circa 5 minuti, fino a che non diventa elastico. Metti l'impasto in una ciotola unta e coprilo con un panno. Lascia lievitare in un luogo caldo per circa 1 ora, fino al raddoppio.

Una volta lievitato, stendi l'impasto su un piano infarinato in un rettangolo. Spalma 30 g di burro fuso sull'impasto e piega in terzi.

Ripeti il processo di stesura e piegatura per altre due volte, refrigerando l'impasto per 30 minuti tra un passaggio e l'altro.

Preriscalda il forno a 180°C. Stendi l'impasto in un grande rettangolo e ritaglia 12 quadrati.

Forma ogni quadrato a forma di corona, unendo gli angoli al centro e posizionali in uno stampo per muffin leggermente unto.

Lascia riposare per 10 minuti, quindi inforna per 25 minuti, fino a doratura. Sforna e lascia raffreddare su una griglia.
