Inizia preparando il caramello: in un pentolino, unisci lo zucchero di cocco con 3 cucchiai d'acqua e porta a ebollizione senza mescolare. Lascia cuocere fino a quando il composto non diventa dorato, circa 5-7 minuti.

Versa il caramello in uno stampo per flan, facendo attenzione a coprire uniformemente il fondo.

In una ciotola grande, sbatti insieme il latte di mandorla, lo yogurt greco, le uova, l'eritritolo, l'estratto di vaniglia e un pizzico di sale fino a ottenere un composto omogeneo.

Filtra il composto per eliminare eventuali grumi e versa nella forma precedentemente preparata.

Prepara una bagnomaria posizionando lo stampo in una teglia più grande riempita di acqua calda fino a metà dell'altezza dello stampo del flan.

Copri la teglia con un foglio di alluminio e cuoci in forno preriscaldato a 160°C per circa 60 minuti, o fino a quando il flan non si rapprende e un coltello inserito nel centro esce pulito.

Una volta cotto, lascia raffreddare a temperatura ambiente prima di trasferire in frigorifero per almeno 4 ore.

Per servire, fai scorrere un coltello lungo i bordi dello stampo, copri con un piatto e capovolgi delicatamente per rilasciare il flan.
