Affettate finemente le cipolle bianche e trasferitele in una pentola antiaderente con 10 ml di olio extravergine a fuoco medio-basso.

Coprite e fate appassire le cipolle per 8-10 minuti, mescolando di tanto in tanto finché diventano traslucide e caramellate.

Nel frattempo, pelate e tagliate le patate dolci a cubetti uniformi di circa 1,5 cm.

Aggiungete le patate dolci alle cipolle, versate il brodo vegetale tiepido e portate a ebollizione.

Aggiungete il peperoncino intero, abbassate il fuoco e fate cuocere per 30-35 minuti fino a che le patate non diventano molto tenere.

A cottura quasi ultimata, sminuzzate il formaggio feta con le mani in pezzi irregolari di 2-3 cm.

Spegnete il fuoco e aggiungete la feta, mescolando delicatamente: il formaggio inizierà a sciogliersi naturalmente nel caldo della zuppa.

Regolate di sale e pepe; se preferite più cremosità, schiacciate leggermente alcuni cubetti di patata con il dorso di un cucchiaio contro le pareti della pentola.

Distribuite il pane integrale tostato e spezzettato nei quattro piatti fondi.

Versate la zuppa, irroratela con gli ultimi 10 ml di olio extravergine e finite con una generosa grattugiata di pecorino romano.
