In un frullatore, unisci il succo d'arancia, l'aceto di mele, l'olio d'oliva, la salsa di soia e il succo di lime. Aggiungi la cipolla, l'habanero, l'aglio, il miele, il timo, il pepe nero, il pimento, la cannella, la noce moscata e lo zenzero. Frulla fino ad ottenere una marinata omogenea.

Metti 1/4 di tazza di marinata in una ciotola piccola e riponila in frigorifero per dopo. In una ciotola grande, versa la marinata rimanente sopra il pollo e mescola bene per ricoprire ogni pezzo. Lascia marinare in frigorifero per almeno 2 ore, preferibilmente tutta la notte.

Preriscalda il forno a 200°C (modalità grill) e prepara una teglia foderata di carta da forno.

Rimuovi il pollo dalla marinata, eliminando l'eccesso, e disponilo sulla teglia. Griglia il pollo in forno per circa 25-30 minuti, girandolo a metà cottura, finché il pollo non è cotto e dorato. Durante la cottura, spennella il pollo con la marinata riservata per mantenere umido e saporito.
