Method

Sbattere gli albumi in una ciotola insieme al Parmigiano Reggiano, sale e pepe fino a ottenere una consistenza omogenea e densa.

Riscaldare una padella antiaderente a fuoco medio-alto e spruzzarvi un velo di olio. Versare il composto di albume in uno strato sottile e uniforme (circa 5 mm).

Cuocere per circa 3-4 minuti fino a quando la frittata di albume non si rapprende (deve rimanere morbida ma solida).

Trasferire su un piatto e lasciar raffreddare per 2 minuti.

Nel frattempo, mondare gli spinaci, lavarli e cuocerli in una pentola con un bicchiere d'acqua per 3-4 minuti. Scolarli bene e strizzarli energicamente per eliminare l'umidità.

Tagliare le carote a listarelle sottili e allungate: cuocerle in acqua salata per 5-6 minuti fino a renderle tenere ma croccanti. Scolarle.

Spargere sulla frittata di albume il prosciutto crudo e gli spinaci ben strizzati in strato uniforme.

Arrotolare delicatamente il foglio di frittata su se stesso, creando un cilindro compatto.

Tagliare l'involtino in fette di 2-3 cm di larghezza.

Disporre sul piatto le listarelle di carota come base, adagiarvi sopra gli involtini in piedi. Servire freddo o a temperatura ambiente.
