Lasciare l'albume d'uovo a temperatura ambiente per 30 minuti in una ciotola metallica fredda.

Preriscaldare il forno a 140°C. In una ciotola, mescolare la farina di mandorle con l'eritritolo.

Montare l'albume con un pizzico di sale fino a ottenere picchi saldi, aggiungendo l'eritritolo poco alla volta.

Incorporare delicatamente il mix di farina di mandorle ed eritritolo al composto di albume.

Trasferire il composto in una sac à poche e formare due dischetti su carta forno, distanziandoli. Lasciare riposare per 20 minuti fino a quando non si forma una pellicola opaca sulla superficie.

Cuocere per 15-18 minuti finché le superfici risultano asciutte. Lasciar raffreddare completamente.
