In una ciotola, monta gli albumi d'uovo a neve ferma. Aggiungi l'eritritolo poco alla volta e continua a montare fino a ottenere un composto lucido e spumoso.

In un'altra ciotola, setaccia la farina di mandorle. Se desideri, aggiungi il colorante naturale e mescola bene.
