Tagliare le fragole in quarti, le arance a spicchi, i kiwi a dadini di circa 1,5 cm, le mele a fettine sottili e versare tutto in una ciotola capiente. Aggiungere i mirtilli interi.

Aprire i baccelli di vaniglia con un coltellino e grattare i semini all'interno della ciotola con la frutta.

Versare il succo di limone fresco e il miele sulla frutta, mescolare delicatamente con un cucchiaio di legno per 2-3 minuti, fino a quando la frutta è uniformemente rivestita e gli zuccheri iniziano a caramellare leggermente.

Dividere la frutta preparata in 4 coppette da dessert di vetro, versando anche il liquido formatosi.

Coprire ogni coppetta con pellicola trasparente e riporre in frigorifero per almeno 30 minuti.

Al momento di servire, completare ogni porzione con una pallina di gelato al fiordilatte proteico (circa 30 g) o, in alternativa, con un cucchiaio di yogurt greco naturale al 0% di grassi.

Decorare con qualche mirtillo fresco o fetta sottile di scorza di limone se desiderato.
