Lava le melanzane e tagliale a fette sottili nel senso della lunghezza (circa 0,5 cm).

Disponi le fette di melanzana in uno scolapasta, cospargile di sale e lascia riposare per 20 minuti per far perdere l'acqua di vegetazione.

Sciacqua le melanzane sotto acqua corrente fredda e asciugale bene con carta assorbente.

In una padella, scalda l'olio d'oliva e aggiungi lo spicchio d'aglio schiacciato. Fai rosolare per un paio di minuti.

Aggiungi la passata di pomodoro, l'origano, il sale e il pepe. Cuoci per circa 10 minuti.
