In una casseruola, unire il latte di mandorla, il dolcificante, la farina di avena, l'amido di mais, gli albumi e l'estratto di vaniglia. Mescolare bene fino ad ottenere un composto omogeneo.

Cuocere a fuoco medio, mescolando continuamente, fino a quando la crema non si addensa. Togliere dal fuoco e lasciare raffreddare completamente.

Nel frattempo, preparare la base di pasta sfoglia leggera. In una ciotola, mescolare 100 g di farina di avena con 50 g di burro di cocco fuso e 50 ml di acqua fredda. Impastare fino ad ottenere un composto omogeneo.

Stendere l'impasto su una superficie infarinata fino a ottenere uno spessore di circa 3 mm. Tagliare in rettangoli della dimensione desiderata.

Preriscaldare il forno a 180°C e disporre i rettangoli di pasta su una teglia rivestita di carta forno. Bucherellare la superficie con una forchetta.

Cuocere in forno per circa 15-20 minuti, fino a doratura. Lasciare raffreddare.

Comporre la millefoglie alternando strati di pasta sfoglia e crema proteica. Decorare con frutta fresca a piacere.
