Rosolare in una padella antiaderente a fuoco medio 30g di cipolla tritata con 5ml di olio EVO per 2 min. Aggiungere 80g di pollo tritato, cumin (1/4 cucchiaino), curcuma (1/4 cucchiaino), zenzero (1/4 cucchiaino), sale e pepe. Cuocere 5 min, poi versare 75ml di acqua, 5ml di miele e metà del mazzetto di coriandre. Coprire e cuocere a fuoco lento 12 min fino a ridurre il liquido a consistenza sciroppo.

Mentre cuoce il pollo, tostare in padella antiaderente 15g di mandorle sbucciate e 5g di mandorle affettate per 2 min, mescolare continuamente. Mescolare 1/4 cucchiaino di cannella con 5g di zucchero di canna integrale.

Una volta cotto il pollo, sfilettarlo in lamelle sottili. Ridurre il sugo fino a concentrarlo, eliminare la coriandre.

Battere leggermente 1 uovo in una ciotola e versarlo nel sugo lentamente, mescolando costantemente fino a creare una salsa cremosa. Unire il pollo e il resto della coriandre tritata.

Preparare 3 foglie di pasta fillo (bagnate con spray d'olio o 2ml di olio EVO totali): posizionare la prima foglia su piatto, cospargere con 1/3 del ripieno di pollo, mandorle e salsa all'uovo. Sovrapporre la seconda foglia, ripetere il ripieno. Aggiungere la terza foglia in cima e spolverare con mandorle affettate tostate, un pizzico di cannella e 2g di zucchero a velo.
