Method

In una pentola media, riscaldare l'olio extravergine a fuoco moderato. Aggiungere la cipolla finemente tritata e la carota: rosolare per 3 minuti fino a quando la cipolla diventa trasparente e profumata.

Aggiungere il prosciutto crudo tagliato in striscioline sottili e i piselli: mescolare per 2 minuti per insaporire gli ingredienti.

Versare il brodo di pollo caldo nella pentola. Portare a ebollizione, quindi aggiungere l'orzo perlato integrale. Ridurre il fuoco e cuocere a fuoco lento per 20 minuti fino a quando l'orzo è tenero.

Nel frattempo, in una ciotola piccola, mescolare vigorosamente le uova intere con il Parmigiano Reggiano grattugiato fino a ottenere un composto omogeneo e cremoso.
