Preriscalda il forno a 170°C in modalità ventilata. Rivesti una teglia rettangolare (26x18 cm) con carta forno e vaporizza leggermente con olio.

**Primo strato (bianco)**: sbatti le 6 uova intere in una ciotola fino a montatura leggera. Aggiungi 30 g di Parmigiano, 10 g di burro fuso, 13 g di semolino, sale, pepe e noce moscata. Versa il composto nella teglia e livella. Cuoci 12 minuti fino a doratura leggera. Trasferisci su un tagliere e lascia raffreddare 5 minuti.

**Secondo strato (verde)**: in una ciotola pulita, sbatti 45 g di albume d'uovo con 25 g di Parmigiano, 10 g di burro fuso, 13 g di semolino. Aggiungi gli spinaci freschi (o surgelati scongelati e strizzati), sale, pepe e noce moscata. Riversa sulla base raffreddata, livella e cuoci 12 minuti. Trasferisci su un tagliere.

**Terzo strato (rosso)**: sbatti di nuovo 45 g di albume con 25 g di Parmigiano, 10 g di burro, 14 g di semolino e il concentrato di pomodoro. Aggiungi sale, pepe e noce moscata. Versa sullo strato verde, cuoci 12 minuti fino a doratura. Lascia raffreddare completamente.
