Prepara l'impasto: in una ciotola mescola la farina integrale, l'acqua tiepida, 20 ml di olio extravergine, il sale e il pepe. Impasta fino a ottenere un disco omogeneo, avvolgi nella pellicola e riposa in frigorifero per 50 minuti.

Nel frattempo prepara il ripieno: trita finemente scalogni, aglio e prezzemolo, quindi rosola in padella con 10 ml di olio a fuoco medio per 3 minuti.

Pulisci i funghi con carta da cucina, tagliali a fette e aggiungili al soffritto; cuoci 6-7 minuti a fuoco vivace, mescolando spesso, fino a far evaporare l'umidità. Salami e pepami.

Trasferisci in una ciotola e lascia raffreddare lievemente. Aggiungi la ricotta, 40 g di parmigiano e mescola delicatamente.

Preriscalda il forno a 190°C. Estrai l'impasto dal frigorifero, dividilo in 4 parti e stendi ciascuna in un cerchio di circa 22 cm di diametro tra due fogli di carta forno.

Deposita il ripieno funghi-ricotta al centro di ogni disco, lasciando 4 cm di bordo libero. Ripiega i bordi della pasta leggermente verso il centro, creando una galette rustica.

Trasferisci le galette su una teglia rivestita di carta forno. Spennella i bordi con l'uovo sbattuto, cospargi con il parmigiano rimasto e aggiungi 3-4 foglioline di timo per galette.

Cuoci in forno a 190°C per 25-28 minuti, fino a doratura leggera. Lascia riposare 5 minuti prima di servire.
