Method

In una ciotola capiente, unisci la farina di avena, le proteine in polvere, le uova, il latte, lo yogurt, il miele e il sale. Mescola bene fino ad ottenere un impasto omogeneo.

Aggiungi il lievito e la scorza di limone, mescola nuovamente e lascia riposare l'impasto coperto per circa 1 ora in un luogo tiepido, fino al raddoppio del volume.

Dopo la lievitazione, incorpora delicatamente i mirtilli rossi disidratati nell'impasto.

Infarina leggermente il piano di lavoro e trasferisci l'impasto, dividendo in 8 porzioni da 80 g ciascuna.

Arrotola ogni porzione formando delle palline e disponile in uno stampo per muffin rivestito di carta forno.

Copri con un canovaccio e lascia lievitare per ulteriori 30 minuti.

Preriscalda il forno a 180°C e cuoci i mini panettoni per 20-25 minuti, fino a doratura.
