In una padella, tostare a secco i chiles guajillo e ancho per 2-3 minuti, finché non emettono un profumo intenso; trasferirli in un frullatore.

Scaldare il brodo di pollo e versarlo sui chiles; aggiungere le proteine vegetali in polvere e lasciare riposare per 10 minuti.

Nel frattempo, rosolare in una padella asciutta il pomodoro e il tomatillo per 4-5 minuti fino a leggera doratura.

In un'altra padella, riscaldare l'olio e rosolare cipolla e aglio per 3-4 minuti; aggiungere anacardi, uvetta, semi di cumino, timo, pepe e cannella, e cuocere per ulteriori 5 minuti.

Unire tutto nel frullatore con il pomodoro e il tomatillo e frullare fino a ottenere una crema omogenea.
