Preriscalda il forno a 200°C. Affetta la melanzana a fette sottili (circa 0,5 cm) e il cavolfiore in piccoli pezzi. Disponi le fette su una teglia rivestita di carta forno, spennella con un filo d'olio EVO e cuoci in forno per 10 minuti.

In una padella antiaderente, rosola la carne macinata di tacchino con la cipolla e l'aglio tritati fino a doratura (circa 5 minuti). Aggiungi i pomodori pelati, il concentrato di pomodoro, l'origano, la paprika, la cannella e la noce moscata. Cuoci per 5 minuti a fuoco medio, aggiustando di sale e pepe.

In un pentolino, prepara la besciamella leggera mescolando lo yogurt greco, l'amido di mais e il latte scremato. Scalda a fuoco dolce fino a ottenere una consistenza cremosa, aggiustando di sale e aggiungendo un pizzico di noce moscata.

In una pirofila monoporzione (18x12 cm), inizia a stratificare: uno strato di cavolfiore, uno strato di ragù di carne, uno strato di melanzane e infine la besciamella.

Completa con la mozzarella light grattugiata e inforna per 15 minuti, finché la superficie non sarà dorata.
