Method

Rompere il cioccolato fondente in piccoli pezzi e riporli in una ciotola di vetro. Posizionare la ciotola a bagnomaria (pentolino con acqua tiepida a fuoco basso) e mescolare fino a scioglimento completo, circa 5 minuti.

Aggiungere l'olio di cocco al cioccolato fuso e mescolare delicatamente per ottenere una consistenza fluida e omogenea.

In una ciotola separata, setacciare la polvere proteica al cacao con il sale marino fino e l'estratto di vaniglia, mescolando bene per evitare grumi.

Immergere una noce alla volta nel cioccolato fuso, aiutandosi con due forchette per scolare il cioccolato in eccesso, poi trasferirla su un foglio di carta forno.

Una volta coperte tutte le noci, cospargere leggermente il composto proteico sulla superficie ancora calda del cioccolato, in modo che aderisca uniformemente.

Trasferire il vassoio in frigorifero per almeno 30 minuti fino a completo indurimento.
