Lava e sbuccia le patate dolci, quindi tagliale a cubetti e mettile in una pentola. Coprile con acqua e porta a ebollizione. Fai cuocere a fuoco medio-basso fino a quando non sono tenere, circa 15-20 minuti; scola.

Schiaccia le patate dolci ancora calde in una ciotola grande. Aggiungi lo yogurt greco, il sale e l'eritritolo, mescolando bene fino ad ottenere un composto omogeneo. Lascia raffreddare.
