Preriscalda il forno a 200°C. Rivesti una teglia con carta forno.

Lava le patate dolci, bucherellale con una forchetta e sistemale sulla teglia. Cuoci in forno per circa 30-40 minuti, finché saranno tenere.

Una volta cotte, lascia raffreddare leggermente le patate dolci, quindi sbucciale e schiacciale in una ciotola.

Aggiungi lo yogurt greco e mescola fino a ottenere un composto omogeneo. Se desideri, aggiungi il miele per dolcificare.

Aggiungi il sale e la farina integrale poco alla volta, mescolando fino a formare un impasto morbido ma non appiccicoso.

Copri l'impasto con pellicola trasparente e lascia riposare in frigorifero per circa 30 minuti.

Dividi l'impasto in 8 porzioni. Su un piano infarinato, stendi ciascuna porzione in una sfoglia sottile.
