Riscalda il forno a 180°C. Foderai una teglia di 20x20 cm con carta da forno, lasciando i bordi liberi per la circolazione del calore.

In una ciotola pulita, versa gli albumi e montali con una frusta manuale per 2 minuti fino a ottenere una mousse densa e brillante.

Aggiungi il miele, il pizzico di sale e la vaniglia: continua a mescolare delicatamente con movimenti dall'alto verso il basso per mantenere l'aria incorporata.

In una padella antiaderente, scalda mezzo cucchiaio di olio di cocco a fuoco medio. Tosta il cocco grattugiato per 1 minuto, mescolando costantemente fino a profumare leggermente.
