In una padella antiaderente, scalda l'olio extravergine di oliva e aggiungi il cipollotto affettato. Fai soffriggere per 2-3 minuti fino a quando diventa morbido.

Aggiungi il petto di pollo tagliato a cubetti e cuoci a fuoco medio per circa 5-7 minuti, fino a quando è ben cotto. Aggiungi i pomodorini e gli spinaci, mescolando fino a far appassire gli spinaci. Insaporisci con sale, pepe e salsa di soia. Tieni da parte.

In una ciotola, sbatti le uova con un pizzico di sale e pepe.

Nella stessa padella, versa metà delle uova sbattute e inclina la padella per distribuire uniformemente il composto. Cuoci a fuoco basso per 3-4 minuti, fino a quando l'omelette è quasi cotta.

Al centro dell'omelette, metti metà del ripieno di pollo e verdure. Ripiega i lati dell'omelette sopra il ripieno e fai scivolare l'omelette su un piatto.

Ripeti i passaggi 4 e 5 con il restante composto di uova e il ripieno.

Servi subito le omelette guarnendo con peperoncino in scaglie e un filo di succo di lime.
