Method

In una pentola, portare a ebollizione il brodo vegetale e aggiungere il riso integrale. Ridurre il fuoco al minimo, coprire e cuocere per circa 30-35 minuti, finché il riso non è tenero e il liquido è assorbito.

Nel frattempo, in una padella, scaldare l'olio extravergine d'oliva a fuoco medio. Aggiungere la carota, il sedano, la cipolla e il peperone, quindi rosolare per circa 5 minuti fino a quando le verdure si ammorbidiscono.

Unire l'aglio tritato e cuocere per un altro minuto.

Aggiungere i fagioli neri (scolati e sciacquati), la paprika, il cumino, l'aceto, il pepe e il sale. Mescolare bene e cuocere a fuoco medio-basso per 10-15 minuti, fino a quando tutto è ben amalgamato e caldo.

Servire il riso integrale caldo, con il mix di fagioli e verdure sopra, e guarnire con peperoncino secco a piacere.
