Inizia preparando il riso di cavolfiore: trita finemente 150g di cavolfiore fresco e mettilo da parte.

In una padella antiaderente, scalda 3g di olio di cocco a fuoco medio-alto e aggiungi 100g di petto di pollo a strisce. Cuoci per circa 4 minuti fino a doratura, poi trasferisci il pollo in un piatto.

Nella stessa padella, unisci le carote affettate, il cavolo rosso e i piselli surgelati. Saltali per 3 minuti fino a quando non diventano teneri.

Crea uno spazio al centro della padella e versa un uovo sbattuto. Mescola fino a cottura completa, circa 2 minuti.

In una ciotola, prepara il condimento mescolando la crema di mandorle, la salsa di soia, il succo di lime, la salsa chili aglio, lo zenzero e l'aglio. Versa il condimento nella padella e mescola bene.

Aggiungi il riso di cavolfiore e il pollo, mescolando per amalgamare il tutto e scaldare per 2 minuti.
