Method

In una ciotola, mescola l'olio d'oliva, la paprika affumicata, il cumino, il pepe nero, l'aglio in polvere, lo zenzero e la salsa di soia.

Aggiungi le costine di maiale e massaggia bene la marinatura su tutta la carne. Lascia marinare in frigorifero per almeno 1 ora.

Scalda una padella antiaderente a fuoco medio-alto e rosola le costine marinate per circa 5 minuti su entrambi i lati, fino a doratura.

Rimuovi le costine dalla padella e mettile da parte. Nella stessa padella, aggiungi la cipolla affettata e il peperoncino tritato, cuocendo fino a quando la cipolla è trasparente.

Aggiungi il pomodoro tritato e cuoci per un paio di minuti.

Rimetti le costine nella padella, versa il brodo e porta a ebollizione.

Riduci il fuoco, copri e lascia sobbollire per circa 45 minuti, finché le costine sono tenere e il sugo si è addensato.

Servi le costine calde, guarnite con coriandolo fresco.
