Method

Mescolare in una ciotola 40g di farina di mandorle, 15g di proteine in polvere neutre, 5g di amido di tapioca e un pizzico di sale fino.

Aggiungere 80ml di acqua tiepida e mescolare fino a ottenere un impasto omogeneo e liscio; lasciar riposare 15 minuti.

In una piccola padella, scaldare 5ml di olio di sesamo e 5ml di olio EVO a fuoco medio per 2 minuti, aggiungere 5g di farina di mandorle e cuocere 1 minuto; raffreddare a temperatura ambiente.

Stendere l'impasto su carta forno in forma rettangolare sottile (circa 3mm), spennellare con la miscela oleosa e cospargere abbondantemente i cipollotti freschi tritati (30g).

Arrotolare stretto partendo dal lato lungo, poi avvolgere a spirale e appiattire nuovamente in un disco di 5mm.

Cuocere in padella antiaderente con 3ml di olio EVO a fuoco medio-alto per 3-4 minuti per lato fino a doratura croccante.
