In una ciotola, unisci la ricotta e gli albumi d'uovo, mescolando bene fino ad ottenere un composto cremoso.

Aggiungi la farina d'avena, il lievito, l'eritritolo (o miele) e il sale, mescolando fino a ottenere un impasto omogeneo.

Lascia riposare l'impasto per 5 minuti per farlo addensare.
