Lavare gli spinaci e lessarli in acqua salata per 8 minuti, poi strizzarli bene e tritarli grossolanamente.

In una ciotola, stemperare la ricotta magra con le uova intere e il latte fino a ottenere un composto omogeneo e fluido.

Unire gli spinaci tritati al composto di ricotta e mescolare delicatamente.

In un'altra ciotola, setacciare insieme le due farine e aggiungere il lievito madre e il sale.

Versare il composto di ricotta e spinaci nella miscela di farine, incorporando gradualmente con una spatola fino a formare un impasto coeso.

Aggiungere l'olio extravergine e i semi di zucca, amalgamando bene.

Trasferire l'impasto in uno stampo da plumcake rivestito di carta forno, livellando la superficie.

Coprire con un canovaccio umido e lasciare riposare 45 minuti in luogo tiepido.
