Preriscaldare il forno a 180°C e foderare uno stampo rettangolare (20x10 cm) con carta forno.

In una ciotola, coprire i datteri, i fichi e le albicocche con l'acqua tiepida e lasciarli ammorbidire per 5 minuti, poi tritarli grossolanamente.

In una seconda ciotola, mescolare la farina d'avena, le proteine in polvere, il lievito, la cannella, il cardamomo, i chiodi di garofano, la scorza di limone, la scorza d'arancia e il sale.

Aggiungere mandorle, noci e uvetta al composto di farina.

In un'altra ciotola, sbattere l'uovo con il latte scremato e il miele fino a ottenere un composto omogeneo.

Unire il composto liquido ai secchi e mescolarlo delicatamente fino a incorporare tutti gli ingredienti.

Aggiungere i frutti secchi ammorbiditi e mescolare con cura.

Versare l'impasto nello stampo e livellare la superficie.

Infornare per 40-45 minuti fino a quando uno stecchino inserito al centro esce asciutto.

Estrarre dal forno e lasciar raffreddare nello stampo per 10 minuti, poi trasferire su una griglia.
