Riscaldare 60ml di latte scremato con 5g di olio EVO fino a 38°C, sciogliervi 2g di lievito madre istantaneo mescolando bene.

Aggiungere 40g di yogurt greco 0%, 0,1g di zafferano polverizzato, 3g di eritritolo e 0,3g di sale, mescolare.

Incorporare 30g di farina di mandorle e 15g di proteine in polvere neutre, mescolare fino a ottenere un impasto omogeneo e liscio.

Riposare coperto 20 minuti a temperatura ambiente.

Modellare l'impasto in una corda di 15cm, arricciarla a S su carta forno.

Spennellare con un velo di albume d'uovo, infornare a 200°C per 10-12 minuti fino a doratura.
