Scalda il latte a circa 37°C e scioglici dentro il lievito di birra, lo zucchero integrale e i coloranti naturali scelti; lascia riposare 5 minuti.

In una ciotola grande versa il mix di latte e aggiungi le proteine del siero di latte, il burro light ammorbidito a pezzi, la farina e il sale.

Impasta a mano o con mixer per 8-10 minuti fino a ottenere un impasto liscio ed elastico; deve risultare leggermente appiccicaticcio ma gestibile.

Forma una palla, posizionala in una ciotola leggermente unta, copri con un panno umido e lascia lievitare a temperatura ambiente per 90 minuti fino al raddoppio di volume.

Trasferisci l'impasto su un piano leggermente infarinato, dividilo in 12 porzioni uguali e forma palline tonde, compatte e regolari.

Disponi i panini su una teglia rivestita di carta forno, distanziati di almeno 3 cm, copri di nuovo con un panno e lascia lievitare ancora 60 minuti.

Preriscalda il forno a 200°C.

Spennella leggermente ogni panino con latte scremato usando un pennello da cucina.

Inforna a 200°C per 18-22 minuti fino a doratura uniforme e leggera, verificando con uno stecchino che l'interno sia cotto.
