Method

In una ciotola capiente, mescola la scorza di limone grattuggiata con la farina integrale, la polvere proteica e il lievito di birra secco.

Aggiungi l'acqua tiepida e le 2 uova intere, mescola energicamente con una forchetta o le mani fino a formare un impasto ruvido.

Aggiungi il sale, il miele e il burro chiarificato, continua a impastare per 2-3 minuti fino a ottenere un impasto liscio e elastico.

Trasferisci l'impasto su un piano leggermente infarinato e lavora per altri 2 minuti, poi forma una palla.

Riponi in una ciotola coperta da pellicola e lascia lievitare a temperatura ambiente per 2 ore e mezza, fino al raddoppio.

Sgonfia delicatamente l'impasto e dividi in 12 panini da circa 35 g l'uno, formando palline uniformi con le mani.

Posiziona i panini su una placca foderata di carta forno, copri con pellicola e lascia lievitare 40 minuti.

Preriscalda il forno a 180°C. Sbatti il tuorlo rimasto con 5 g di miele e spennella leggermente i panini.

Cuoci per 12-14 minuti fino a doratura leggera. Raffredda su una gratella prima di servire.
