Method

In una ciotola, scaldare l'acqua tiepida a circa 37°C e aggiungere il lievito di birra secco; lasciar riposare 5 minuti fino a quando inizia a fermentare.

Aggiungere il miele e l'olio di cocco al composto di lievito, mescolare bene.

In una seconda ciotola, setacciare insieme la farina di farro integrale, la farina 00, le proteine in polvere e il sale.

Versare il liquido nei secchi e mescolare fino a formare un impasto ruvido.

Trasferire l'impasto su un piano di lavoro leggermente infarinato e impastare energicamente per circa 8-10 minuti fino a quando diventa liscio e elastico.

Porre l'impasto in una ciotola ungata con olio di cocco, coprire con un canovaccio umido e lasciar lievitare in luogo tiepido e riparato per 45-50 minuti, fino al raddoppio del volume.

Dividere l'impasto in 12 porzioni uguali e formare dei panini rotondi compatti.

Posizionare i panini su una teglia rivestita di carta forno, lasciando circa 3 cm di spazio tra uno e l'altro.

Coprire con il canovaccio e lasciar lievitare ulteriormente per 30-35 minuti.

Precaldare il forno a 180°C.

Preparare una miscela con l'uovo intero e il latte scremato, quindi spennellare leggermente la superficie dei panini.

Infornare a 180°C per 16-18 minuti fino a doratura uniforme.

Trasferire i panini su una gratella e lasciar raffreddare completamente prima di servire.
