Scalda leggermente il latte di mandorla a circa 37°C, quindi sciogliici il lievito di birra con 5 ml di miele, lasciando riposare 5 minuti finché la miscela diventa spumosa.

In una ciotola grande, mescola la farina 00, la farina di avena e le proteine in polvere con il sale.

Versa il latte lievitato nel composto secco insieme all'olio di girasole e inizia a impastare con le mani fino a ottenere un impasto elastico e uniforme (circa 8-10 minuti di lavoro manuale).

Trasferisci l'impasto in una ciotola, coprila con un panno umido e lascialo lievitare in un luogo tiepido per 90 minuti, fino a che il volume non raddoppia.

Prepara una placca da forno con carta forno. Dividi l'impasto lievitato in 4 parti uguali e modella delicatamente 4 panini rotondi, disponendoli ben distanziati sulla placca.

Spennella leggermente la superficie di ogni panino con un po' di latte di mandorla e cospargili con i semi di sesamo.

Copri nuovamente e lascia lievitare per 60 minuti ulteriori fino a quando i panini raddoppiano di volume.

Preriscalda il forno a 180°C.

Cuoci i panini per 18-20 minuti fino a dorarsi leggermente in superficie.

Estrai la placca dal forno e trasferisci i panini su una gratella per farli raffreddare completamente prima di utilizzarli.
