Riscalda il latte scremato a 37°C e aggiungi il miele e il lievito secco, lascia riposare 5 minuti fino a ottenere una miscela schiumosa.

In una ciotola capiente, mescola la farina integrale, la farina 00, le proteine in polvere e il sale.

Versa il composto di latte nel mix di farine e inizia a impastare con le mani, aggiungendo l'olio di semi di girasole poco a poco.

Continua a lavorare l'impasto per 8-10 minuti fino a ottenere una massa elastica, liscia e coesa. Se necessario, aggiungi poca acqua tiepida.

Forma una palla e sistemala in una ciotola unta leggermente, copri con un canovaccio umido e lascia lievitare a temperatura ambiente per 1 ora e 30 minuti, fino al raddoppio del volume.
