Method

Mettere in una ciotola lo zucchero di canna integrale (12 g) e la scorza grattugiata di un limone bio, mescolare fino a profumare bene.

In una terrina, aggiungere alle uova intere e versare il burro fuso tiepido, montare con le fruste per 2 minuti fino a ottenere un composto pallido.

Unire le proteine del siero vaniglia, la farina integrale, la farina di mandorle, il lievito e il sale; mescolare delicatamente con una spatola fino a combinare tutto.

Aggiungere l'uvetta (rinsciacquata 5 minuti in acqua tiepida per una migliore idratazione), i canditi e i pinoli; distribuire uniformemente.
