Cuocere 150g di cavolfiore a dadini in acqua salata per 12 minuti fino a tenerezza, quindi drenare bene e schiacciare con forchetta aggiungendo 30g di parmigiano grattugiato e 10g di olio EVO; far raffreddare.

In padella con 5g di olio EVO, rosolare 60g di cipolla tritata e 1 spicchio d'aglio per 3 minuti, aggiungere 100g di manzo magro macinato, sfumare con 5ml di aceto e mescolare con 3g di concentrato di pomodoro, 1g di cumino e pepe; cuocere 4 minuti e raffreddare.

Formare 2 palline di cavolfiore (circa 40g l'una), scavare leggermente il centro, riempire con il composto di carne e sigillare.

Passare nella farina di mandorle (15g), poi nell'albume d'uovo leggermente montato, quindi nel pangrattato proteico (10g); refrigerare 30 minuti.

Cuocere in forno a 200°C per 12 minuti su carta forno, girandole a metà cottura, fino a doratura croccante.
