Lavare le patate novelle e lessarle in acqua salata per circa 15 minuti, fino a quando sono tenere ma ancora sode.

Scolarle e lasciarle raffreddare leggermente, quindi tagliare la parte superiore per creare un'apertura.

Con un cucchiaio, scavare delicatamente l'interno delle patate, facendo attenzione a non rompere la buccia.
