Method

Tritare finemente 50 g di pistacchio con l'olio di cocco fino a formare una pasta granulosa. Distribuire il composto sul fondo di 6 pirottini da 7 cm, pressando bene e creando una base uniforme.

In una ciotola mescolare lo zucchero di canna con la stevia e la scorza di limone grattugiata fine. Aggiungere il formaggio cremoso light e la ricotta, mescolare con una frusta fino a ottenere una crema liscia e omogenea.

Incorporare delicatamente gli albumi uno alla volta, continuando a mescolare in modo da non incorporare aria in eccesso. Aggiungere la maizena setacciata e le foglie di menta tritate finissime.

Riempire i pirottini fino a 1 cm dal bordo con il composto di ricotta. Coprire con carta da forno e posizionare in una teglia con 2 cm di acqua calda sul fondo (bagnomaria).

Cuocere in forno preriscaldato a 160°C per 22-25 minuti, finché la superficie risulta appena assestata ma il centro rimane leggermente tremolante.

Estrarre dal forno e dal bagnomaria, lasciar raffreddare a temperatura ambiente per 30 minuti, poi trasferire in frigorifero per almeno 2 ore.

Poco prima di servire, affettare il mango e tagliarlo a dadini. Decorare ogni cheesecake con mango fresco, pistacchio tritato e qualche foglia di menta intera.
