In una padella antiaderente, riscalda 10ml di olio EVO e fai rosolare la cipolla tritata per circa 5 minuti, fino a quando diventa traslucida.

Aggiungi i funghi affettati e continua a cuocere per altri 5-7 minuti, fino a che non saranno morbidi. Regola di sale e pepe.

In una ciotola, unisci la ricotta light e l'albume, mescolando fino a ottenere un composto omogeneo. Incorpora il mix di funghi e cipolla.

In un'altra ciotola, versa la farina di avena e aggiungi l'acqua tiepida, mescolando fino a ottenere un impasto elastico.

Stendi l'impasto su un piano infarinato fino a uno spessore di circa 3mm e ritaglia dei cerchi di circa 8cm di diametro.

Posiziona un cucchiaio di ripieno al centro di ogni cerchio, piega a mezzaluna e sigilla i bordi premendo bene.

Porta a ebollizione una pentola d'acqua salata e cuoci i pierogi per circa 5-7 minuti, fino a quando non affiorano in superficie.
