Method

Mescolare in una ciotola 40g di farina di mandorle, 15g di psyllium husk e 2g di lievito secco.

Aggiungere 60ml di acqua tiepida e 1 albume d'uovo, impastare fino a ottenere un composto omogeneo e coeso.

Coprire con pellicola e lasciare riposare 30 minuti a temperatura ambiente.

Trasferire l'impasto su carta forno inumidita, stenderlo delicatamente con i polpastrelli formando un rettangolo sottile (15x20cm) con cornicione rialzato.

Cuocere in forno preriscaldato a 220°C per 12-15 minuti fino a doratura, irrorare con 2g di olio extravergine d'oliva prima della cottura.
