In una ciotola, sciogliere il lievito in acqua tiepida con lo zucchero e attendere 5 minuti.

Aggiungere la farina integrale di grano saraceno, l'albumin in polvere, il sale e l'olio, impastare energicamente per 8-10 minuti fino a ottenere un composto omogeneo ed elastico.

Trasferire l'impasto in una ciotola leggermente oleata, coprire con un panno umido e far lievitare a temperatura ambiente per 60 minuti, fino al raddoppio del volume.

Preriscaldare il forno a 220°C e foderare una teglia rettangolare con carta da forno.

Stendere l'impasto sulla teglia con le mani inumidite, creando uno spessore uniforme di circa 8 mm e un bordo leggermente più rilevato.

Distribuire uniformemente la polpa di pomodoro sulla base, condire con sale, pepe e oregano.

Tritare finemente i funghetti e distribuirli sulla pizza, quindi aggiungere i carciofini tagliati a spicchi.

Strappare la mozzarella di bufala in piccoli pezzi e distribuirla omogeneamente.
