Stendi l'impasto integrale su una teglia foderata di carta forno fino a ottenere uno spessore di circa 8 mm; copri e lascia riposare 20 minuti a temperatura ambiente.

Nel frattempo, riscalda un tegame a fuoco medio e cuoci i dadini di guanciale per 3-4 minuti fino a renderli croccanti; trasferiscili su carta assorbente, mantenendo 1 cucchiaio dell'olio rilasciato nel tegame.

Nello stesso tegame, aggiungi il petto di pollo macinato e rosola per 4-5 minuti a fuoco medio-alto finché non risulta completamente cotto; salsa e pepa, poi togli dal fuoco.

In una ciotola sbatti l'uovo intero con il tuorlo, aggiungi il Pecorino, il Parmigiano e un pizzico di pepe nero; incorpora il pollo rossolato e mescola bene.

Distribuisci il composto di pollo e uova sulla base di pizza, creando uno strato uniforme; cospargila con il guanciale croccante.
