In una ciotola sciogliere il lievito in acqua tiepida e attendere 5 minuti fino alla formazione di schiuma leggera.

Aggiungere le farine, il sale e 8 ml di olio, impastare energicamente per 8-10 minuti fino a ottenere un impasto elastico e omogeneo.

Formare una palla liscia, coprire con un canovaccio umido e lasciare lievitare in luogo tiepido per 2 ore fino al raddoppio del volume.

Trasferire l'impasto su una teglia 30x40 leggermente unta con 2 ml di olio e distenderlo con le dita fino a coprire uniformemente.

Lasciare riposare 20 minuti, nel frattempo preriscaldare il forno a 200°C ventilato.

Cuocere la pizza per 16-18 minuti fino a doratura dorata e croccantezza.

Nel frattempo, lavare la rucola, condirla con succo di limone fresco, pepe e 2 ml di olio.

Affettare l'avocado poco prima di servire e cospargerlo di succo di limone per evitare ossidazione.
