Preriscalda il forno a 180°C e rivesti una teglia da 24 cm con carta da forno.

Disponi le prugne denocciolate sul fondo della teglia, con la parte tagliata verso l'alto.

In una ciotola, sbatti le uova con il dolcificante, il latte scremato e l'estratto di vaniglia fino a ottenere un composto omogeneo.

Aggiungi la farina di avena, la cannella e la scorza di limone, mescolando bene per evitare grumi.
