Method

Riscalda il forno a 200°C. Lessare la patata dolce in acqua salata per 12 minuti fino a renderla morbida, poi tagliarla a dadini piccoli.

Pulire le sarde eliminando la testa e le interiora, risciacquarle sotto acqua fredda e asciugarle con carta da cucina. Tagliarle grossolanamente.

In una ciotola, mescolare le sarde tagliate, i dadini di patata dolce, 1 uovo intero, il pangrattato integrale, l'uvetta, i pinoli tostati, il Parmigiano e la ricotta salata grattugiati, sale, pepe e peperoncino fresco.

Mescolare il composto con le mani fino a ottenere un impasto omogeneo. Se necessario, aggiungere un cucchiaio di pangrattato per compattare.

Sbattere leggermente l'uovo rimasto in un piattino. Posizionare il pangrattato su un altro piattino.

Con le mani leggermente umide, formare 12 polpette di circa 4 cm di diametro. Passarle prima nell'uovo sbattuto, poi nel pangrattato.

Disporre le polpette su una teglia rivestita di carta forno, spruzzare leggermente con olio extravergine d'oliva usando uno spruzzatore.

Infornare a 200°C per 22-25 minuti fino a ottenere una doratura dorata e croccante.

Estrarre dal forno e lasciar riposare 2 minuti prima di servire.
